Nutritional Choice of the Month - February 2007: Black Beans

Found at all times of the year, black beans are a fantastic source of fiber. With just over 15 grams/serving (1 cup), beans prove to be a good source of plant-based protein. Vegetarians often find it challenging to incorporate protein into their diets. Black beans make a great addition to their daily food intake.
Black beans also contain compounds called “polyphenols” that are useful for those with elevated cholesterol because they act as antioxidants in the bloodstream, preventing cholesterol from oxidation by free radicals.*
